Combining ēvOAK's understanding in oak extraction and TranStore's manufacturing expertise, together we have created a simple system to effectively extract oak faster and without creating harsh, over extracted flavors.

Commercial Trial Results

An experiment was conducted in the summer of 2016 to evaluate the claim that the ēvOAK oak extractor saves time in the cellar. The same wine was used with three different oak formats: oak chips, ēnoCUBES and tank staves. The control wine involved a typical static soak protocol using the same type of oak and format, and was mixed once per week prior to sampling. The treated wine used the oak extractor at 40 gal/min to complete one full “volume” in 8 hours. The treated tanks were 19,000 Gallons, while the control was 9,000 Gallons.

The data above demonstrates the extractor can significantly save time, in addition to saving labor by limiting tank entry. Due to the increased extraction of important oak compounds utilizing the ēvOAK Extraction Tank, oak characteristics that typically takes weeks or months can be achieved in a matter of days. Until now, many oak additions required multiple cellar workers accessing large storage tanks.  Now, keeping the oak outside of the large tank in the ēvOAK Extraction Tank limits the number of personnel needed to complete the task, which lowers overall labor cost.
